Easy, healthy, and super flavorful chicken chipotle tacos!
Ingredients

- 1 lb skinless chicken breast, sliced
- 2 red bell pepper, sliced
- 2 medium red onion, sliced
- 8 corn tortillas
- Cilantro leaves
- Lemon juice
Sauce ingredients:
- 3 tbsp chipotle sauce
- 2 tbsp olive oil
- 2 tbsp water
- 4 tsp paprika
- 2 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper
Instructions
- In a medium bowl stir the sauce ingredients. Set aside half of it for later.
- In the same bowl, blend in the sliced chicken and mix until evenly coated. Set aside.
- In the meantime, heat some olive oil in a medium pan over medium heat. When oil is hot, add the onions and red bell pepper. Sauté until seared, softened, and charred. Set veggies aside.
- In the same pan, add some more olive oil. Add the marinated chicken and cook until cooked through and lightly charred.
- Set the tortillas flat on your plate, then gently add the chicken in the middle, then add a small portion of the veggies. Drizzle some extra sauce, squeeze some lemon juice, and top with cilantro leaves. Enjoy!
