Southwest Chicken Chipotle Tacos (Gluten Free)

Easy, healthy, and super flavorful chicken chipotle tacos!


  • 1 lb skinless chicken breast, sliced
  • 2 red bell pepper, sliced
  • 2 medium red onion, sliced
  • 8 corn tortillas
  • Cilantro leaves
  • Lemon juice

Sauce ingredients:

  • 3 tbsp chipotle sauce
  • 2 tbsp olive oil
  • 2 tbsp water
  • 4 tsp paprika
  • 2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper


  1. In a medium bowl stir the sauce ingredients. Set aside half of it for later.
  2. In the same bowl, blend in the sliced chicken and mix until evenly coated. Set aside.
  3. In the meantime, heat some olive oil in a medium pan over medium heat. When oil is hot, add the onions and red bell pepper. Sauté until seared, softened, and charred. Set veggies aside.
  4. In the same pan, add some more olive oil. Add the marinated chicken and cook until cooked through and lightly charred.
  5. Set the tortillas flat on your plate, then gently add the chicken in the middle, then add a small portion of the veggies. Drizzle some extra sauce, squeeze some lemon juice, and top with cilantro leaves. Enjoy!
