These tacos are the best flavorful lunch or dinner recipe for when you’re into something different. I’m always craving tacos, and these are a great option because they’re easy to make plus they’re super delicious and healthy. They’re filled with a super flavorful mix of chipotle chicken, sliced grilled bell pepper and onions, cilantro, and extra chipotle sauce. So, make sure to set some sauce aside to have enough for every taco at the end. To be on the safe side, I like to double the sauce ingredients to make sure I have enough of it (because to be honest, there’s never enough sauce 😉). Just make sure to set half of the sauce aside before pouring half of it into the chicken.
If you like tacos as I do, this will be your new favorite recipe. They taste like the real deal; I believe one of the most important ingredients here is the tortilla. I always go with the 100% corn tortillas, since they’re gluten free plus, I think they taste better than flour tortillas. If you have corn flour at home, you may also make the tortillas yourself.

Easy, healthy, and super flavorful chicken chipotle tacos!
Ingredients
- 1 lb skinless chicken breast, sliced
- 2 red bell pepper, sliced
- 2 medium red onion, sliced
- 8 corn tortillas
- Cilantro leaves
- Lemon juice
Sauce ingredients:
- 3 tbsp chipotle sauce
- 2 tbsp olive oil
- 2 tbsp water
- 4 tsp paprika
- 2 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper
Instructions
- In a medium bowl stir the sauce ingredients. Set aside half of it for later.
- In the same bowl, blend in the sliced chicken and mix until evenly coated. Set aside.
- In the meantime, heat some olive oil in a medium pan over medium heat. When oil is hot, add the onions and red bell pepper. Sauté until seared, softened, and charred. Set veggies aside.
- In the same pan, add some more olive oil. Add the marinated chicken and cook until cooked through and lightly charred.
- Set the tortillas flat on your plate, then gently add the chicken in the middle, then add a small portion of the veggies. Drizzle some extra sauce, squeeze some lemon juice, and top with cilantro leaves. Enjoy!
