These healthy chocolate cornflakes bites are refined sugar free, gluten free, and vegan! They’re made using simple ingredients like maple syrup, cocoa, cornflakes, and vanilla. They’re a nice twist of the classic rice krispies treats – but made healthier, tastier, and SO good!
A healthier dessert – healthy chocolate cornflakes bites
This is my new favorite gluten free and vegan treat! I absolutely LOVE cornflakes and covered in chocolate with a dark chocolate layer on top? Just the best combination! It’s such an easy no-bake recipe and takes about 10 minutes to make. Just make sure they have enough time in the fridge to set in order to slice them up.
It’s also a very fun dessert to make, family-friendly, and perfect when you need a healthy chocolate dessert. Perfect to make ahead of time and have them in the fridge for a treat. The flavor is on point, honestly, they have stolen my heart.
How to make healthy chocolate cornflakes bites
Step 1:
In a small saucepan over medium heat, mix and blend the maple syrup, coconut oil, cocoa powder, vanilla extract, and salt.
In a large bowl, add the cornflakes and pour the liquid mixture. Mix until the cornflakes are well coated.
Step 2:
Line an 8×8 inch dish with parchment paper (so it’s easier to lift the treats later on) and pour the coated cornflakes. Press them with the bottom of your rubber spatula or the bottom of a flat measuring cup.
Step 3:
In a microwave-safe cup, add dark chocolate and coconut oil. Heat it in 20-second intervals until melted. Pour it on top of the coated cornflakes.
Place in the fridge for at least 2-3 hours. Run a knife over hot water and gently cut into squares.

How to store
Fridge: store any leftover healthy chocolate cornflakes bites in the fridge in an airtight container for up to 7 days. Can be enjoyed cold, directly from the fridge.

Ingredients
- 3/4 cup maple syrup
- 2 tbsp coconut oil
- 1/2 cup cocoa powder
- 1/2 tsp vanilla extract
- 1/8 tsp salt
- 3 cups corn flakes
- 1 1/2 cup 70% dark chocolate flakes/chips
- 2 tbsp coconut oil
Instructions
- In a small saucepan over medium heat, stir de maple syrup, coconut oil, cocoa powder, vanilla extract, and salt until well blended.
- In a large mixing bowl, add the corn flakes and pour the liquid mixture. Mix until all the corn flakes are evenly coated.
- Line an 8×8 inch pan with parchment paper. Let the sides of the parchment paper hang over the edges so it’s easier to lift later. Pour the mixture into the pan and press it using the back of your rubber spatula or a flat measuring cup.
- In the microwave in 20-second intervals, melt the dark chocolate and coconut oil. Pour it evenly on top of the corn flakes treats.
- Place in the refrigerator for at least 2-3 hours. To slice, run a knife over hot water, and then gently cut into squares.
