- Coconut sugar – coconut sugar is lower in glycemic index, making these cookies refined sugar free, but feel free to use whatever you have on hand!
- A pinch of salt – perfect to balance out the flavors.
- Egg – this will bind our dough together.
- Dark chocolate – to dip the cookies. Here you can use dark chocolate chips.
- Coconut oil – to soften the chocolate and make it smoother.
- Chopped nuts – chopped hazelnuts, almonds, or pecans.

Description
These chocolate dipped butter cookies are made with whole-grain flour and less sugar, healthier than your average cookie!
Ingredients
- 1 1/4 cup spelt flour (150 g)
- 1/3 cup unsalted butter (75 g)
- 1/4 cup coconut sugar (50 g)
- 1/2 egg
- A pinch of salt
- 1 cup dark chocolate
- 1 tbsp coconut oil
- Chopped nuts (hazelnuts, almonds, pecans)
Instructions
- Preheat the oven to 340 F / 170 C and line a baking sheet with parchment paper. Set aside.
- In a medium bowl, add the flour, sugar, a pinch of salt, and cubed butter. Mix using your hands and work the butter into the flour, until you’re left with a wet sand-like consistency. It’s okay if you are left with tiny chunks of butter.
- Scramble the egg and add only half of it to the dough. Mix until the dough comes together. At this point the dough should be soft, but not sticky.
- Roll out the dough on a lightly floured surface.
- Use cookie cutters to cut out shapes or use the top of a round cup to cut out a perfectly round circle. Place each cookie on your lined baking sheet.
- Bake for 10-12 minutes, or until the edges are light golden brown.
Melted chocolate:
- In the microwave in 20-second intervals, melt the dark chocolate and coconut oil.
- Dip each cookie in the melted chocolate and sprinkle chopped nuts on top.
- Let chill for at least one hour for the melted chocolate to dry.
