Creamy Peanut Butter Spicy Noodles

Description

These creamy peanut butter noodles are packed with flavor in a creamy and soft rich sauce. These are vegan, gluten and dairy-free, and make for a perfect lunch or dinner!


Ingredients

For the peanut sauce

  • 4 tbsp peanut butter
  • 2 tbsp gluten-free soy sauce (can substitute for regular or less-sodium soy sauce)
  • 3 tsp sesame oil
  • 3 tsp maple syrup
  • 1 tsp sriracha
  • 1 tsp chili flakes
  • 2 tbsp water (if needed)

For the noodles

  • 1/2 pack or 125 g glass noodles
  • 1 tbsp olive oil
  • 3 garlic cloves, minced

To top

  • Green onions
  • Crushed peanuts
  • Sesame seeds

Instructions

  1. Bring a pot of water to boil, cook your noodles according to package directions.
  2. In a bowl, mix the sauce ingredients. 
  3. In a medium-sized pan or pot, add the olive oil and sauté the garlic. Then, add the noodles and the peanut sauce. Mix together. If the sauce is too thick, add a splash of water.
  4. Serve hot. Top it off with some crushed peanuts, green onions, and sesame seeds.

Notes

To get creamy peanut butter noodles use a creamy peanut butter. The creamier the peanut butter you use, the better.

Add sautéed vegetables if you’d like. Just add them together with the garlic and keep going from there.
