Creamy sun-dried tomato pasta with figs is a very easy recipe that requires minimal ingredients and steps: a perfect easy and fancy recipe.
This recipe is made by adding chopped onions, sun dried tomatoes, and figs to a pan with a splash of olive oil. After sprinkling with some salt and drizzling with olive oil, we add just enough chopped fresh mozzarella to give it a delicate creamy taste. After stirring the mozzarella, it creates the most delicious and creamy sun-dried tomato and fig sauce that’s then tossed with rigatoni.
Ingredients you’ll need
- Pasta of choice – any kind you like!
- Sun-dried tomatoes – for flavor.
- Figs – this pairs well with sun dried tomatoes and will add a perfect fruit serving.
- Fresh mozzarella – adds volume, protein, and a delicate cheesy flavor.
- Extra virgin olive oil – from the sun-dried tomatoes or extra virgin olive oil.
- Salt – to taste.
You can definitely make some adjustments to this based on what you have on hand. Substitute sun dried tomatoes for regular cherry tomatoes. If you’d like, you can also make this recipe with regular pasta, gluten-free pasta, or grain-free pasta!

Ingredients
- 6 figs, chopped
- 12–15 sun-dried tomatoes, chopped
- 1 medium onion, chopped
- 1 tbsp oil from sun-dried tomatoes or extra-virgin olive oil
- Fresh mozzarella cheese, in cubes
- 8 oz pasta of choice
- Salt, to taste
Instructions
- On a cutting board, chop the onion, figs, and sun-dried tomatoes.
- In a medium pan, heat some olive oil and sauté the onions over medium heat, until the onions are translucent and golden.
- Add in your chopped figs and sun-dried tomatoes. Drizzle oil and add salt to taste. Cook over low-medium heat for about 7-10 minutes, stirring occasionally. If necessary, add some extra olive oil.
- Meanwhile, cook the pasta according to package directions.
- Drain pasta. Add and stir the pasta along with the fresh mozzarella cubes in the sauce. Give it a good stir for about 2 minutes, until the mozzarella begins to melt.
- Remove from heat and serve.
- Optional: top it off with some parmesan cheese

- Cook Time: 15 minutes
Tasted really great! It’s something different if you’re tired of the usual pasta bolognese/pesto/carbonara etc. 🙂
I added some basil and a little bit of salami, but that was just personal preference, and it still tasted good with it.
