This buffalo chickpea toast was inspired by the ceaseless craving of my buffalo wings restaurant style. I wanted to try a healthy homemade recipe that tasted just as good. And I must say this buffalo chickpea salad on toast is delicious!
It’s crunchy from the veggies, creamy from the Greek yogurt, and slightly spicy from the buffalo sauce. The yogurt and buffalo sauce mixed in with some drops of lemon juice brings out most of the bright and fresh flavor. Amazing!
The buffalo chickpea toast is made with very simple ingredients and takes about 5 minutes to make once you already have all the ingredients ready. It’s the fastest recipe ever! It’s also very convenient for meal prep so you can just double up the recipe and save it in the fridge for later to enjoy.
This recipe is also super healthy. This is an amazing high protein, nutrient-dense veggie recipe to add to your weekly menu. It’s packed with protein from the chickpeas, vitamins from the vegetables, and healthy fats from the Greek yogurt. Make it vegan by swapping the Greek yogurt for a dairy free yogurt and gluten free by using gluten free bread.

- Drain and rinse the canned chickpeas – for the best taste. Also, if you have the time discard the skins. This will make it easier to digest.

Description
The most delicious buffalo chickpea salad on a toast!
Ingredients
- 1 15-oz can of chickpeas, drained and rinsed
- 1/2 stalk of celery, chopped
- 1/2 carrot, chopped
- 1/4 red bell pepper, chopped
- 1/4 red onion, chopped
- 2 tbsp buffalo sauce
- 2 tbsp greek yogurt
- Juice of 1/2 a lemon (optional)
- Salt and pepper, to taste
- Toast, gluten free if needed
Instructions
- Add the drained and rinsed chickpeas to a medium bowl and mash using a fork, leaving some of them whole.
- Add the rest of the ingredients to the bowl and stir until well combined. Taste and adjust seasonings as desired.
- Serve with toast. Optional to top it off with sliced avocado and crumbled feta.
